CRUMPETS at home from scratch

If you're a fan of crumpets, you absolutely must have a go at making them at home from scratch.

They're incredibly easy to make and the result is simply delicious. Once you've tasted homemade crumpets, you'll never want to go back to store-bought ones. Let me walk you through just how simple it is!

INGREDIENTS

- 1 1/2 cups of plain flour

- 1 cup of warm water

- 1 TSP of dry yeast

- 1/4 TSP baking soda

- 1/2 TBS of honey

- 1 TSP vanilla extract

- 1/2 TSP of fine Celtic sea salt

- butter for cooking

NOTES

-I made these with the intention of adding sweet toppings of you’d like to add savory toppings just leave out the vanilla

-Regular salt is fine too, we like Celtic sea salt for it’s health benefits and taste


METHOD

1. Add dry ingredients to a large bowl, mix well, then add wet ingredients and whisk together until smooth

2. Cover with a damp clean tea towel and set aside on the kitchen bench for 3o minutes for the batter to rise (make sure it’s not in direct sunlight)

3. Preheat a pan (I love a well seasoned cast iron skillet) melt butter and add buttered steel rings

4. Add enough batter to each ring to only fill one third in height as the crumpets need room to rise

5. Turn the heat down as you want the crumpet to cook through, flip only when the top is semi set and the bubbles are burst much like when you cook pan cakes

6. Continue this process until all the batter has been used up, this makes about 6 crumpets but you can double this recipe to make a bigger batch too

I like to toast mine in the toaster till crunchy on the outside and serve with butter and honey, enjoy!
