not quite strawberry jam & WHIPPED CREAM WITH HONEY

This recipe is my trusty companion to pair with my beloved scones, but honestly, my "not quite strawberry jam" finds its way onto just about anything in our kitchen.

Whether it's scones, pancakes, pikelets, or crumpets, you name it, this sauce adds a delightful touch to any treat!

GIVE it a try!

STRAWBERRY SAUCE

-fresh or frozen strawberries topped and sliced

-honey

WHIPPED CREAM WITH HONEY

-thickened cream

-honey

-the most important thing is not to overwork the dough you only the to bring the ingredients together (absolutely NO kneading whatsoever)

NOTES

-I’ve not included quantities for this recipe because I make batches of varying sizes depending on what it’s for and the honey can be added to sweeten to your liking

-best served with out scones


METHOD

1. Add strawberries and honey to a pot and bring to a soft boil, once boiling reduce to a simmer and simmer for about 5 minutes. Taste and add more honey if you please.

2. I don’t like to cook the strawberries for too long as I like them to retain their colour.

3. Set aside to cool slightly.

4. Into a large jar add cream and honey and whip with and emerison blender

5. Cut dough with a knife into 6-8 pieces and slightly separate

6. Brush tops with vanilla and milk mixture.

7. Bake at 200 Degrees Celsius for 20ish minutes (till the tops are golden brown).

Enjoy hot with honey and butter or let cool slightly and enjoy them with lashings of jam and cream!
